Fermented Zoodles Recipe

  • 2 large zucchinis
  • 1 cup filtered water
  • 1 tsp sea salt + more for sprinkling
  • freshly cracked black pepper


  1. Dissolve 1 tsp sea salt into 1 cup filtered water to make a brine, set aside
  2. Spiralize the zucchinis and add the zoodles to a large bowl
  3. Generously sprinkle with salt and pepper and mix to distribute
  4. Let sit for 20 minutes
  5. Massage zoodles to encourage them to release some moisture
  6. Pack tighly into a quart size glass jar
  7. Pour in the salt water brine until zoodles are covered
  8. Use a fermentation weight to keep all zoodles submerged and use an airlock lid to seal the jar
  9. Let ferment at room temperature for 21 days
  10. After 21 days, move to refrigerator and use in any cold zoodle recipe
